Entre els motius es troben la moda y la banalitzaci&oacute; d&rsquo;aquestes dietes. Aix&ograve; ha suposat un pas enrere en la qualitat de vida no nom&eacute;s dels cel&iacute;acs, sin&oacute; tamb&eacute; d&rsquo;aquells que s&oacute;n sensibles al gluten.<\/p>\n<p>L&rsquo;auge de les dietes sense gluten per part de persones que no pateixen cap d&rsquo;aquestes malalties explica que els restaurants, obradors, carnisseries o gelateries ofereixin productes sense gluten. El problema &eacute;s que, sovint, la identificaci&oacute; de l&rsquo;aliment no es correspon amb la realitat i incorpora traces de gluten per contaminaci&oacute; encreuada, &eacute;s a dir, pel fet d&rsquo;haver entrat en contacte amb altres productes alimentaris que s&iacute; que en duen.<\/p>\n<p>Per tal de revertir aquesta situaci&oacute;, l&rsquo;Associaci&oacute; Cel&iacute;acs de Catalunya i la Generalitat de Catalunya han presentat una campanya de conscienciaci&oacute; #lestracescompten<\/p>\n<p>El fenomen tamb&eacute; &eacute;s el resultat d&rsquo;una legislaci&oacute; que li dona cabuda, el reglament europeu 1169\/2011, vigent des de finals del 2014. Aquesta regulaci&oacute; exigeix que es marquin els ingredients al&middot;l&egrave;rgens dels productes servits en aquest tipus d&rsquo;establiments, per&ograve; no diu res de la seva manipulaci&oacute;. Aix&iacute;, en molts restaurants, els plats fets amb productes que origin&agrave;riament no contenen gluten duen l&rsquo;espiga barrada, que indica que el plat final no cont&eacute; gluten, malgrat que durant el proc&eacute;s d&rsquo;elaboraci&oacute; s&rsquo;ha contaminat. Les raons s&oacute;n diverses per&ograve; van des de l&rsquo;&uacute;s d&rsquo;un ganivet que anteriorment s&rsquo;ha utilitzat per manipular aliments amb gluten o una barra de pa sense gluten posada damunt d&rsquo;una de normal.<\/p>\n<p>Aquesta situaci&oacute; explica que des del 2015 hagin augmentat en un 600% les incid&egrave;ncies i reclamacions relatives a la mala praxi en termes de rigor de la informaci&oacute; relativa als aliments, de dietes no inclusives per a cel&iacute;acs a les escoles per&ograve; majorit&agrave;riament d&rsquo;intoxicacions. De fet, el 75% dels cel&iacute;acs que ingereixen gluten ho fan de manera involunt&agrave;ria.<\/p>\n<p>La presidenta de l&rsquo;Associaci&oacute; Cel&iacute;acs de Catalunya, Olga Cuesta, va demanar ajudes a l&rsquo;administraci&oacute; per fer front al cost del &ldquo;medicament&rdquo; d&rsquo;aquests malalts, en refer&egrave;ncia als productes sense gluten, que s&oacute;n un 315% m&eacute;s cars que la resta.<\/p>\n<p><strong>Font: ARA \/ Departament de Salut<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>L&rsquo;oferta gastron&ograve;mica &ldquo;sense gluten&rdquo; ha crescut un 30% des del 2014, per&ograve; nom&eacute;s un 3% &eacute;s realment apte per a cel&iacute;acs.
